When the prelude starts, one enters the concept of the lyrics, and climb up to the climatic chorus and the conclusion is full of warmth and smiles. We’re comparing cuisine to music, having the tasting process the same as listening to a song – from the refreshing taste to the enhanced taste to being full. Using the taste of home cooked food by our elders as a standard, combining it with creative matching and cooking method, along with enhanced taste to recreate our stories.
We’re warm because of cuisine and moved because of music. Althouth the two are from different hometowns, they’re able to make a memory-filled lunchbox together.
【腐乳辣筍飯球】
將小時候早餐的白粥好夥伴-豆腐乳、辣酸筍切碎混合均勻之後,拌入白飯中混合均勻,
最後再以海苔包裹住,透過發酵香氣與酸辣滋味喚醒精神與味蕾。
[ Fermented Bean Curd Pickled Bamboo Rice Balls ]
From our childhood memories, the perfect dish to go with white congee – fermented bean curd. Mix it together with spicy pickled bamboo thoroughly and then add it into white rice and mix again. Then wrap it in seaweed. The aroma of the fermented bean curd and spiciness of the pickled bamboo will refresh your mind and awaken your palate.
【珍珠丸子】
用豬絞肉、馬蹄、蝦米、蔥、薑、酒等食材一起攪拌成肉餡後,捏成丸狀沾滿糯米,
以中大火蒸20分鐘出籠,就是過年團聚時外婆總會端上餐桌的簡單美味。
[ Grandma’s Pearl Balls ]
Ground pork, water chestnut, dried shrimp, green onion, ginger, wine, etc. are mixed together to form the filling. Then the filling is shaped into balls and the surface is covered in glutinous rice. Steam them for 20 minutes using medium or high heat. It’s the simple dish that grandma always serves on Chinese New Year family reunions.
【衝菜香腸飯球】
把高梁香腸煎熟與趁著過年前做起來的衝菜(芥菜花)切成碎末,拌入白飯混合均勻,
每一口都能吃到衝菜特有的嗆鼻風味與香腸的鮮香。
[ Preserved Kale Sausage Rice Balls ]
Pan fry the sorghum sausages until fully cooked and cut it up really fine with the preserved kale (canola flowers). Then mix them into the white rice. You’ll be able to taste the unique flavor of the preserved kale and aroma of the sausage with every bite.
【酥炸肉餡地瓜球】
將五香梅花肉餡包入地瓜泥,裹上麵包粉酥炸至金黃酥脆起鍋,
一口咬下,讓人想起小時候上館子才能吃到的粉蒸排骨。
[ Squash Balls with Meat Filling ]
Wrap the five-spices pork blade shoulder filling in squash paste and cover with bread crumbs and fry until golden brown. Just one bite will remind one of going to a restaurant during childhood and tasting steamed spareribs in rice flour.
【紅燒肉飯球】
把醬油、冰糖燒成的紅燒醬汁刷上五花薄片再包裹住飯球,以高溫烘烤五分鐘,
紅燒的鹹甜與五花肉油脂香氣,不禁想起奶奶拿手的紅燒肉。
[ Braised Pork Rice Balls ]
Brush the pork belly slices with the sauce made from soy sauce and crystal sugars. Then wrap it in rice balls and bake it on high heat for 5 minutes. The salty sweetness of the sauce and the aroma of the fat of the pork belly will remind you of grandma’s braised pork.
【桂花糰子】
回憶起小的時候,祖父常常會做給我們那盤沾上紅糖水才好吃的糯米煎餅,
將煮好糯米糰子淋上親手熬煮的桂花糖漿,彷彿回到了童年。
[ Osmanthus Syrup Glutinous Rice Balls ]
During childhood, grandpa often made glutinous pancakes with brown sugar syrup. Drizzling on the osmanthus syrup on the cooked glutinous rice balls takes you down memory lane.
